last year i created a masterpiece salad featuring my favorite fruit, pomegranates.
(i have eleven in my fridge right now. i ate one last night and used two in another salad today)
check out the recipe below:
christmas salad
combine desired amount of romaine lettuce and spinach
sprinkle generously with finely shredded mozzarella
add 2 fresh mandarin oranges, peeled and diced
add seeds of one pomegranate. (click here for instructions on removing seeds)
sprinkle with sugared pecans (i just combine pecans and sugar in frying pan and stir until sugar melts then pour on wax paper until cool)
serve with dressing below or your favorite poppy seed dressing.
(i buy the dressing from the trolley)
poppy seed dressing
1/4 cup sugar
1 teaspoon salt
1 teaspoon dry mustard
1/3 cup red wine vinegar
1 cup salad oil
1 tablespoon poppy seeds
combine in blender

Mindi - this is my favorite salad! Ever since the Christmas party last year, I make this one a lot!

Near the place where my girls take dance, there is a pomegranate tree in someone's backyard. Some of the branches hang over the fence as do some of the pomegranates (sometimes they even fall off, *gasp*. I asked Joseph and he said legally it's okay to pick them if the branch is extending over the fence or fallen, so we've picked them on occasion and enjoyed them.....but I still do feel a little guilty... ;)
